Add the ghee to the pan and add the chopped onion and ginger and fry until slightly browned - about five minutes. Add the garlic and cook for another two minutes until all of the ingredients are nicely browned.

This is a favorite winter time roti made using corn flour (makki ka atta). Paratha breads are best eaten within a half hour of cooking them but I have warmed them up in the microwave after a couple of days an they still taste amazing.
